Today, my son Darius and I are excited to share a fun evening of baking cookies with you.
This is a Subway-style cookie recipe that Darius tried making on his own and brought home for the family to taste. Here’s the recipe:
- 115g brown butter
- 150g brown sugar
- 115g white sugar
- 1 large egg
- 1 teaspoon vanilla
- 180g all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- Chocolate chips

Instructions:
1. Brown the butter first.
2. Mix the brown butter with the brown sugar and white sugar.
3. Add the egg and vanilla, then mix well.
4. Combine the flour, baking soda, and salt.
5. Fold in the chocolate chips.
6. Chill the dough in the fridge for 30 minutes.
7. Bake at 345°F (175°C) for 11.5 minutes in a standard oven.
8. Bake at 320°F (160°C) for 8–10 minutes in a convection oven.
9. Let the cookies cool for 10 minutes before removing them.
Lessons learned from the experience:
- Use less butter and sugar than the original recipe suggests.
- Pay attention to the type of oven (standard or convection) to adjust the temperature and baking time accordingly.
- If the dough is dry and cracks, add a little water.
- Don’t forget the vanilla! (We forgot it at first because we had a little wine while baking 😅).
- If using high-quality butter like Kerrygold, adjust the amount because it has a higher fat content.
Although our cookies didn’t turn out as perfect as we hoped, the whole family enjoyed them because they were moderately sweet, rich, and crispy around the edges. This was such a fun and memorable bonding experience for me and my son!
