Today, Miriam is back at it—“fake baking” again 😆
Baking has never been my strong suit, but these viral strawberry biscuits looked too easy not to try!
Main ingredients:
– 1 pound of strawberries
– Sugar, baking powder, salt, butter, buttermilk, lemon, flour...

Let’s get started:

Prep the strawberries:
– Wash and dice them.
– Take half and cook them down with 1/3 cup sugar and a splash of lemon juice, just until it thickens a bit.
– Pop that purée in the freezer to chill while we work on the dough.
– Leave the other half of the strawberries diced and fresh. -
Make the dough:
– I doubled the recipe, so I used 4 1/2 cups of flour, added 3 tablespoons of baking powder, a pinch of salt, and sugar (plus a little extra for sweetness).
– Stir in 3 cups of buttermilk—add more if needed until it comes together.
– Fold in the diced strawberries. -
Prep to bake:
– Melt 2 sticks of butter and pour into the baking dish.
– Drop the biscuit dough right into that buttery dish, then spoon the chilled strawberry purée on top. Work fast—the butter's hot!
– Bake at 450°F for 23 to 25 minutes. -
Make the glaze:
– Mix 1 1/2 cups powdered sugar with 3–4 tablespoons of milk, juice from half a lemon, and the zest from that same lemon half.
– Taste and adjust as needed.
And just like that—done!
The biscuits are hot, buttery, sweet, and full of fresh strawberry flavor. I had to pause a minute to gather myself—so good. 😅
