Ingredients for the Lentil Soup

  • Unsalted lentils

  • Unsalted black beans

  • Pinto beans

  • Bell peppers

  • Red and yellow onions

  • Unsalted crushed tomatoes

  • Better Than Bouillon – Vegetable base

  • Trader Joe’s 21 Seasoning Salute

  • Turmeric powder

  • Himalayan pink salt

  • Smoked paprika

  • Fresh ginger

  • Date syrup

Cooking Instructions

  1. Begin by adding about 1 1/3 cups of water to a pot, along with 1 teaspoon of vegetable bouillon.

  2. Season the water with:

    • A sugar-free Stardust Sauce substitute

    • Trader Joe’s 21 Seasoning Salute

    • Turmeric powder

    • Himalayan pink salt

    • Smoked paprika

    • Fresh ginger

    • A splash of date syrup for natural sweetness (around 60 calories per 4 tablespoons).

  3. Add the chopped onions and bell peppers to this seasoned broth. I like to sauté them lightly so they keep a bit of crunch for texture.

  4. Stir in about 1 to 1.5 cups of crushed tomatoes.

  5. Rinse the beans thoroughly before adding them to the pot.

  6. Pour in 1/2 cup of vegetable broth (roughly 390mg sodium per cup) and 1/2 cup of tomato juice to help thin out the soup.

Steamed Vegetables on the Side

Steam these vegetables until tender, then serve them alongside the soup for a balanced and satisfying plate.
