Cooking Lobster Boil & Making Smackalicious Sauce
   

Today, we’re about to cook up something amazing—lobster tails with my special sauce! 

Check it out, I just scored some huge lobster tails—each one as big as... this! Yeah, they were a little pricey—around $50—but they’re super plump and meaty, so worth it. Today, I’m going to try making them in an Instant Pot. Never done it this way before, but hey, we’re experimenting!

Ingredients:  
- Lobster tails  
- Purple and red potatoes  
- Corn  
- Chicken broth  
- Seasonings: Creole, Old Bay, black pepper, paprika, chili powder  

Step 1: Prepping the Broth  
First, I’m starting with the broth in the Instant Pot. Add some chicken broth, a bit of water, and season it up with Creole seasoning—this is my secret blend, y’all!  

Step 2: Making the Sauce  
Now onto the best part—the sauce! I sauté onions, garlic, and ginger in a pan. Then I toss in four sticks of rich, creamy butter (because we don’t play when it comes to flavor). Next up, the seasonings—black pepper, chili powder, and paprika. I like my sauce bold, but feel free to adjust to your own taste.  

For sweetness, I add a mix of brown sugar and white sugar—just enough to give it a subtle, sweet balance. Not too much, though; we’re here to enhance the flavors, not overpower them.  

Step 3: Cooking the Lobster  
The lobster tails go into the Instant Pot, cooking for about 10-11 minutes. Once done, I take them out and give them an ice bath to stop the cooking process. I cook the potatoes and corn in the same broth, so they soak up all those flavors.  

Step 4: Bringing It All Together  
The fun part—cutting the lobster out of the shell, mixing it with the potatoes and corn, and drizzling that buttery, spicy sauce all over everything. And boom, it’s ready to serve!  

Tips:  
- Adjust the seasoning to your liking. Go easy on the salt and don’t be afraid to experiment with flavors.  
- The Instant Pot makes things fast and easy, but if you don’t have one, you can totally boil or steam the lobster the classic way.
