Today was such a beautiful day that I just have to share it with you all. Nate and I decided to enjoy a little date day together, and we chose PF Chang’s as our spot. We wanted to try some of their vegan-friendly dishes, and let me tell you—it did not disappoint. We ordered a variety of plates, including Garlic Chili Dragon Beans (around 530 calories, a little on the oily side but full of flavor), Edamame (400 calories, smooth and delicious), Vegan Lettuce Wraps with Five-Spice Tofu (620 calories and very filling), Stir-fried Eggplant, Brown Rice (190 calories), and their Pad Thai (1220 calories—definitely indulgent but worth it). Of course, we added a few more dishes on top of that.

Switching over to a plant-based lifestyle has truly been a journey for us. It’s not just about eating differently—it’s about learning how to reimagine meals we used to love. Sometimes that means discovering new restaurants, and sometimes it means figuring out how to “veganize” old favorites at home. One tip I’ve learned: always call ahead before heading to a restaurant. Menus you find online, especially on Google, don’t always reflect the vegan options available. It also helps to ask about the kind of oil they use for cooking. And if you’re trying to keep things extra clean, request your dishes steamed instead of stir-fried whenever possible.
What has amazed me the most is how much our taste buds have changed. Nate, who never cared for vegetables before, now craves them. Cucumbers especially! He’ll even go out and buy them himself to snack on. For a man who once avoided veggies, that’s a transformation in itself.
But the biggest change has been in our health. Nate used to rely on a CPAP machine at night because of heavy snoring and sleep issues. Within just 30 days of shifting to a vegan diet and adding juicing, along with dropping about 11–13 kg, he no longer needs that machine. His sleep is deeper, calmer, and we can even track the improvement through his Whoop wristband. That alone has been life-changing for both of us.
