Ingredients You’ll Need
For the Meat:
2 pounds ground beef (93% lean, 7% fat – if your fam is small, 1 pound is enough y’all)
1/2 stick unsalted butter
Chopped onions
Chopped tomatoes
Mixed bell peppers (I added these ‘cause I like it extra y’all!)
1 packet of taco seasoning (I was too lazy to make it from scratch like Claudia 😅)
Cornstarch (to thicken it up)
Seasonings I Used (Y’all don’t have to use all of these!):
Total seasoning
Lemon pepper
Garlic powder
Cayenne pepper
Accent
Tajin pepper
Creole seasoning
Onion powder
For the Tomato Sauce:
1 can Contadina tomato sauce
Seasonings (same as above – season to taste)
Cheese (Y’all know I love a LOT of cheese!):
Mild cheddar cheese
Pepper jack cheese
Mozzarella cheese
Toppings:
Refried beans (just 98 cents a can y’all)
Sour cream
Pico de gallo
Green onions (chives)
Diced tomatoes
Serrano peppers
Cucumbers (for that fresh bite – y’all gotta try it!)
Mild banana peppers
Black olives
Tortillas (the crust):
Flour tortillas (try to get the big round ones if you can)
How to Make It
Step 1: Prep the Meat
Okay y’all, let’s get started!
Melt 1/2 stick of butter in a skillet over medium heat
Sauté onions and tomatoes first (like Claudia does)
Add in your colorful bell peppers (this is my extra twist y’all!)
Add 2 pounds ground beef – I use 93% lean
Break the meat down with a spatula while cooking (I don’t use fancy tools – spatula works for me!)
Step 2: Season the Meat
Y’all know I like my food VERY well-seasoned!
Sprinkle the taco seasoning packet into the meat
Add all those extra seasonings (don’t go as crazy as me y’all!)
Cook until the meat is done
Add a little cornstarch to thicken the juices – Claudia taught me this trick!
Chop the meat even finer for a smoother texture
Step 3: Make the Tomato Sauce
Pour the whole can of Contadina tomato sauce into another pot
Add your seasonings (just like with the meat)
Cook on medium heat and stir well
Step 4: Prepare the Tortillas
This is an important trick y’all!
Take your tortillas
IMPORTANT: Use a fork to poke tiny holes all over – this stops the tortillas from puffing up and bubbling when you fry them!
Lightly fry them with a little oil to get them crispy
Step 5: Prep the Cheese & Toppings
I pre-chopped everything so the video wouldn’t be too long y’all!
Shred all the cheeses
Set up all your toppings in small bowls
Preheat your oven to 350°F
Step 6: Assemble the Mexican Pizza
This part takes some time y’all!
Lay down 1 tortilla as the base
Spread a layer of refried beans (not everyone likes this – my son doesn’t!)
Add a layer of ground beef – I like it meaty!
Sprinkle cheese on top (I mean A LOT of cheese y’all!)
Place another tortilla on top
Spread your tomato sauce over the top tortilla
Add more cheese on top
Step 7: Bake
Pop it in the oven at 350°F for just about 3 minutes – just enough to melt the cheese
Take it out when the cheese is all nice and melted
Step 8: Add Fresh Toppings
I prefer adding toppings after baking ‘cause I don’t want them hot!
Pico de gallo
Green onions (chives)
Cucumbers (trust me y’all – they add that refreshing crunch!)
Serrano peppers (just a little heat!)
Mild banana peppers
Black olives (first time trying these!)
Sour cream

On Seasonings:
“Y’all don’t have to use all what I use – I like my food seasoned heavily, but adjust to your taste!”
On Cheese:
“I like A LOT of cheese y’all! Pepper jack, mild cheddar, mozzarella – whatever you got!”
On Toppings:
“You ain’t gotta be extra like me with the bell peppers, but you know I love that extra flavor and extra pop!”
On Tortillas:
“Get the bigger ones that’s more round if you can – I had to make two per person ‘cause mine were small!”
Fun Fact:
Did you know why onions make you cry? It’s because they contain sulfur – when you cut them, it turns into sulfenic acid and mixes with your tears! (Learned that from a cooking video y’all!)
