About three weeks ago, my son Darius and I decided it was time to take control of our health — and y’all, let me tell you, it’s been *life-changing*! We committed to preparing full meals every three to four days, making sure we always have healthy, home-cooked food ready to grab. And it’s not just for Darius, either — I’ve been cooking for my husband, too. It’s become a family effort, and honestly, we’re all feeling better, stronger, and more energized because of it.
Since April 7th, y’all, we’ve only eaten out **TWO TIMES** — yes, you heard me right! That’s a huge accomplishment for us, because if you know anything about our family, you know we love a good restaurant meal. But now, instead of hitting up takeout spots, we’re focusing on high-protein, low-carb meals packed with fresh veggies. We’re talking chicken breasts, chicken thighs, ground beef, ground turkey — all cooked with love and a little creativity to keep things exciting.
And let me just brag on my husband for a second — he’s been seeing some *major* improvements since we made these changes. I’m not gonna spill all his business (because y’all know I gotta respect his privacy!), but just know that the health benefits are showing loud and clear, and it makes my heart so happy.
As for Darius, he had a goal to put on a little muscle, and baby, he’s doing it! He’s gained about 4-5 pounds, and he’s been taking creatine supplements while working out, which helps retain water in the muscles. Between consistent workouts and the good food we’re prepping, I can see his body transforming — and more importantly, I see his confidence growing.
Now, let me be real with y’all — the *secret sauce* to all of this has been **CONSISTENCY**. And if you know me, you know that sticking to something consistently has never been my strong suit. (Now don’t y’all go telling everybody! 😂) But just doing something *every single day* for three weeks straight has made all the difference. Seeing those small improvements pile up day after day — that’s what keeps us motivated to stick with it.
Meal prepping itself is no small task, though. I’m in that kitchen for a good 4-5 hours when it’s cooking day. I make big batches of rice, roast tons of sheet pan vegetables, and cook up a variety of proteins. And y’all, cooking the proteins definitely takes the longest because I’m trying my best to keep it interesting!
Nobody wants to eat the same boring chicken breast every day — that’s the quickest way to fall off the wagon. So I mix it up with different flavors and cuisines. Sometimes it’s Asian-inspired beef, sometimes it’s chicken seasoned with spices from all around the world. I even whip up different sauces like homemade tzatziki or tahini to add some extra flair. It’s all about keeping our meals healthy *and* exciting.
Today, I’m planning something special: a healthier version of orange chicken! Y’all know the classic orange chicken from the takeout menu — but my husband has to watch his sugar intake now, so I’m putting on my creative chef hat and figuring out how to make a low-sugar, still-delicious version. That’s part of the fun for me — taking our favorite comfort foods and making them better for our bodies.
This journey hasn’t always been easy, but every time we see the progress — whether it’s better energy, weight changes, or just feeling good after a meal — it reminds us why we started. It’s about *taking back our health* as a family, one meal at a time.
